Gelatinized maca and maca flour: Are they the same?


In the current market, 3 types of products derived from maca are mainly marketed. These are fresh maca, maca flour and gelatinized maca, each of these has characteristics and presentations that we will detail below:

- Fresh maca: It is the hypocolyte (edible part) of the recently harvested maca.
- Maca flour: It is the result of the drying and grinding of the maca hypocolite, it does not undergo a cooking process.
- Gelatinized Maca: It is the result of the transformation process using a cooking and spraying technique.

What is evident is that both gelatinized maca and maca flour are suitable for human consumption (which is not recommended with fresh maca), but they differ in their ease of consumption.


Maca flour:

Maca flour comes from the grinding of maca, it has the characteristics and nutrients characteristic of maca. In general, the input used is a mixture of ecotypes, that is, in the production of maca flour, the yellow, red and black varieties are mixed. Maca flour does not undergo a sophisticated transformation process, it is only raw ground and has an intense flavor, so its direct consumption is not recommended for all people.


Gelatinized Maca:

For its part, gelatinized maca is the result of a sophisticated transformation process, in which maca is dried, ground and cooked. This "cooking" process allows us to break the starch chains and achieve a powder product that can be consumed directly.

This process does not alter the nutrients, vitamins or minerals of maca, it only makes it more friendly in direct consumption: it reduces the characteristic bitter taste, does not require cooking and has a high degree of assimilation and digestibility by the body.

In addition, gelatinized maca is processed according to its ecotype, that is, we can find presentations of Black Maca, Red Maca and Yellow Maca. This way of presenting the product is a great benefit for the consumer, since it allows consuming the maca that best suits their needs.


So are they the same?

No, they have similarities (same raw material and appearance), but they differ in the transformation process called gelatinization, a process that allows us to obtain a better final product.
